TASTY THURSDAY

I made this for Thanksgiving, I made it for my husband's family Hanukkah party and hell, I'll probably make it on Christmas. It's that YUMMY! And the colors look pretty too. The green beans and the red pomegranate seeds are very festive.

Best of all this recipe is super easy and quick. You can even make it ahead of time and then just give it a quick zap in the microwave to warm it up. Oh and it's good for you too :)

Pomegranate Green Beans

• 1.5 lbs green beans

• seeds from 1 pomegranate

• 1 shallot

• 2-3 cloves garlic

• 3 Tblsp olive oil

• 1 Tblsp apple cider or white vinegar

• 1/2 cup chopped walnut pieces

• sea salt & pepper to taste

Remove seeds from the pomegranate and set aside. Bring a large pot of water to a boil and place

beans in boiling water. Cover and let simmer on low for 5-6 minutes and immediately remove beans from water and drain. If you're not serving right away run cold water over the beans to stop them frm cooking. While water is boiling, chop the shallot & garlic and saute on low heat with 1 Tbs of the olive oil. Add the pomegranate for 1-2 minutes at the end. Place beans in a serving dish and and add thegarlic,shallot, pomegranate mixture and toss lightly. Add remaining ingredients and serve.
