TASTY THURSDAY

Some nights I don't feel like cooking. That's a rarity for me, because cooking is one of my favorite things to do. So instead of whipping up a traditional meal, I will sometimes do "breakfast for dinner.
I remember when I was a kid and my parents would be like "Hey guys, its breakfast for dinner night"! And you would have thought it was Christmas morning the way we would light up and cheer. I thought my parents were the coolest for these rare occasions. But the secrets out now. What was really going on was my mom saying, "Bob, I'm tired, I'm not cooking".  Little did I know that thirty something years later,  I'd be doing the same thing. (except my "kids" have four legs)

Normally, my breakfast for dinner consists of simple scrambled eggs. But that's kinda boring. So this weekend I created a few variations to spice it up. Hubby was away for a few days this week, so I actually did eat this for both breakfast and a couple of dinners. It's a hearty, healthy anytime meal. I cooked up a few variations, but this one's a bit of a "kitchen sink". If you're a vegetarian, then eliminate the meat listed below and add in extra veggies like broccoli and spinach and mushrooms.  Another great thing about this recipe is that you can make it ahead of time and eat it over the course of a few days or freeze it.

Savory Casserole

  • 10 eggs
  • 1/2 yellow squash diced/cubed
  • 2 tblsp chopped green onion 
  • 2-3 strips of cooked bacon ( turkey or regular)
  • 1 cup cooked ground sweet sausage ( chicken or turkey )
  • coconut oil spray or olive oil 
  • 1/2 sweet potato grated or thinly sliced like potato chips
  • rosemary
  • cayenne paper
  • sea salt
  • garlic powder
  • 1/4 shredded cheddar cheese (reduced fat is better)
Preheat oven to 350 and spray a square 9 x9 baking dish with the oil. Grate or cut the sweet potato and arrange on bottom of the pan. Cook the bacon strips & set aside. Remove sausage meat from casings and cook almost all the way and layer on top of the sweet potato. (If you're doing the vegetarian version, here is where you would put all your vegetables in) Add the squash and the green onion.  Sprinkle the cheese. Beat the 10 eggs in a separate bowl and whisk in the spices then pour over the top of sausage/veggies/cheese. Crumble the bacon and sprinkle on top. Bake for 30-40 minutes.  

*If you want a lower fat/calorie version then eliminate the cheese and the crumbled bacon. I have also tried making this with no meat and a combo of feta and spinach and broccoli. As well as with shredded chicken in place of the sausage.
